Fried Dumplings by Kaitlyn So
When I was 6, I often watched as my mother and my grandmother work diligently at the dining table after we had finished cleaning up after lunch. Large, empty bowls and and dirty utensils litter the polished wood of the table. The only sound was the clanking of spoons and chopsticks. I always asked if I could help but they would refuse and I would complain. Little did I know, this would continue until I was 12 years old. This recipe served as a right of passage for me personally, and I still continue to make these dumplings with my mother and grandmother to this day.
Recipe:
Ingredients:
Ground pork 20 oz - can be substituted for chicken or shrimp
Diced shrimp 8 if large or 12-15 if medium sized
Dried shiitake mushrooms (about) 8
Green onion 1 stalk, chopped
Peanut or vegetable oil (about) 5 tbsp
Sesame oil 1 tsp
Corn starch 2 tbsp
Salt 1/2 tbsp (to taste)
Sugar 1/2 tbsp
Chicken bouillon powder 1/2 tsp
Wonton wrappers 1 pack
Egg, beaten -can be substituted for water
Directions;
Soak mushrooms in hot water for 20 minutes, then dice. Save the water.
Combine ingredients in big bowl and add about 1 oz of mushroom water and mix.
Take one wonton wrapper and scoop some of mixture into the center of the square.
Spread the beaten egg on all the edges surrounding the meat. Fold diagonally to make a triangle. Making sure the meat is on the bottom, fold the two corners on either side to the top and seal with more egg.
Fry in hot oil until golden brown and meat is thoroughly cooked on the inside.
